I have tried to find a link to help me configure and enable XIBO Server 1.8.10 over HTTPS.
Currently I have installed XIBO Server 1.8.10, Docker and with Operating System ubuntu 18.04. have some information to configure the console

That should point you in the correct direction. It’s for 16.04 but the changes to 18.04 should be very small or non-existent.
Alternatively you can use a docker-based proxy such as https://traefik.io or https://github.com/jwilder/nginx-proxy
Both of those can do HTTPS termination for you.
