we have 12 Players running and playing content. If i upgrade the cms to a newer Version (1.8.3 installed, updating to 1.8.9), is the playback on the clients interrupted? Do they connect after update normal to the cms to check if there is new content?

It should not be interrupted at all - depending on your server configuration docker/manual installation etc there might be some down time on the CMS itself during upgrade, but that should not affect the players.
ie you’d expect the players to continue playing the scheduled content and then re-connect to the CMS once it up again.
