In the dashboard I have enabled the IP Address column. But it is displaying the same address (172.19.0.1) against all of my players.
This address is not even in my range and is also not even an additional address on the device

This is docker server ip address. I suggest that you configure docker network as bridge , this way you will see real client ip address. Now you see just the server ip address that is relaying connections from clients to docker
