I was wondering if something like this is currently possible. After assigning a transition, can I remove it without having to remove the content? Currently it does not allow me to delete the transition, I must delete all content.

Yes you can remove transitions by using the edit forms and clicking the ‘blank’ entry at the top, and then click Done:
If you have applied defaults to the Layout then untick the ‘Automatically apply Transitions’ box in the Edit Layout form:
